Banana ends (I was slicing up bananas for dehydrating and the ends had to go somewhere :)

Beef-mushroom-cashew stirfry with coconut rice and prawn-mango-veggie (sans prawns) from Thang Long

Bananas Foster (raw style and yummy!! Dennis loved it)

Recipe: Bananas Foster (serves 2)
Bananas Foster is typically made flambe style on the stove with butter and carmelizing the sugar, however I came across this very easy, yummy and quick version.

In 2 bowls add the following
2 ripe bananas (1 banana per bowl)
1 cup (thereabouts) of vanilla ice cream (mine is dairy free and sometimes raw)
2 tablespoons (thereabouts) chopped walnuts

Glaze:
Mix together in a small bowl the following:
1/4 cup agave nectar (found in Homegrown and Superstore) Agave is low glycemic
2 teaspoons olive oil
1 tablespoon carob powder (needed for the caramel flavor)
1/4 teaspoon rum extract
splash of vanilla extract
pinch of cinnamon
pinch of sea salt

Blend the glaze well and pour over banana/ice cream/nut mixture. Enjoy!

dinner:salad, tofu "parmesan"- super firm tofu cut into slices, breaded with panko breadcrumbs, browned in a pan with olive oil and then topped with marinara sauce and a little mozzarella cheese- just broil until the cheese melts. this is really the only way my kids eat tofu, it tastes like pizza.

Kind of snack, but not really:
Small handful of raw redskin peanuts (had to try before making the chocolate bar)
Licked the left over chocolate from the double boiler after making chocolate dipped strawberries and peanut bars. Nasty job, but someone had to do it so I sacrificed myself.

Supper:
BBQ hamburger (farm-raised beef) with relish, mustard, Daiya cheddar style dairy-free "cheese"

Bowl of popcorn with dairy-free margarine and Frank's Hot Sauce (need more next time). Sihing Prince is at fault for this. :)

Easy Recipe: Chocolate Dipped Strawberries
The strawberries (they're huge!) in the store right now are perfect for dipping and it's so easy to do with a very decadent treat as the result. Have a sheet of parchment paper lining either a cookie sheet or on the counter. If you have a stone like a pizza stone, even better. My countertops are granite so I put the parchment on the counter. Also wash strawberries and pat dry.

In a double boiler (2 pots will do) add about 2 cups of chocolate chips (I use Superstore's PC Decadent as they are good and are dairy free) and about a tablespoon of coconut oil (butter will work too) to add smoothness to the chocolate. Melt together (stirring frequently) over medium-low heat being very careful not to get the chocolate too hot. You should be able to stick your finger into the chocolate without pain. Turn the heat off as the water in the lower pot will keep the chocolate in liquid form.

Check the chocolate temperature by sticking your finger into the chocolate (much more fun than a thermometer and is self-cleaning). The temperature should be barely warm as too hot will cook the strawberries. Grasp strawberries by the tails and roll the strawberry in the chocolate. Drain off excess chocolate and lie on parchment. Repeat for the number of strawberries.

Let your decadent creation sit for the chocolate to harden. (This takes a while). Chocolate left over? Not an issue. Add almonds, peanuts, raisins or other fruit to chocolate and mix in. Pour onto the parchment to make your own chocolate bark or bar. Let harden. Very easy, very decadent, and such a treat.

Breakfast - Nothing but water

Lunch - Bag of chips and a snickers (Ok this was bad as it was after three GREAT hours of Kung Fu).

Supper - Homemade chicken bacon and mushroom carbonara over penne noodles.  Also two glasses of wine and two pieces of garlic bread.

Day 13 (Sunday)

Breakfast - One cup of black coffee

Lunch - Small bowl of left left over pasta from last nights supper

Supper - Asian marinated pork tenderloin that was grilled.  Served over stir fried been sprouts, onions and celery. 

One bottle of Stella Artois and half a can of orange pop.

The weekends tend to be sooooooo much busier than the weekdays (HOW CAN THIS BE????) so I tend to hit the ground running first thing in the morning and grab whatever is available through out the day.  I think I have put Ms. Lowry to shame with these past two days of eating LOL!!

Mr. Repay

Tuna Lasagna - Sifu Vantuil

1 can tuna
1 can cream of mushroom soup ( I usually use cream of celery)
1/2 can milk
3 tbsp margerine
1/2 package lasagna noodles
Grated mozza cheese
Grated chedder cheese
Optional: tomato slices, oregano

Cook noodles and drain. Combine soup, milk and margerine in saucepan until blended. Add tuna (and oregano if desired).
Put small amount of of sauce on bottom of 8" x8" or 9" x 9" baking pan. Alternate rows of noodles, sauce, mozza, noodles, etc. Top off with chedder cheese (and tomato if desired).

Bake uncovered at 350 (325 if glass) for 3/4 hour. Let sit for 15 minutes before cutting and serving.

Note: this recipe feeds our family of 3 with a little bit left over.

  • Nasi Goreng spice mix (very good first time trying it)
Cook pork or any other meat spice to taste, push to side and scramble eggs mix in to meat, add rice and Nasi Goreng spice mix stir fry a few minutes, add vegetables a stir fry until vegetables are cooked but crunchy.
Note: every time I create this it never tastes the same but it is always yummy

Day 9, 10, and 11 Kevin Lindstrom

Day 9
Sausage and Eggs for breakfast.
No lunch.
Pizza, chocolate cake for dessert.
1 glass of wine.
A few chips and 2 cookies for a snack.
3.0 liters ow water.

Day 10
No breakfast.
Chicken, cheese and bacon sandwich with fries for lunch.
Egg noodles,chicken fresh veggies for dinner.
A few chips and 3 cookies for dessert.
3.2 Liters of water.

Day 11
No breakfast.
Soup and rice crackers for lunch.
Granola bar for a snack.
Leftover pizza for dinner.
A handful of "healthy" chips and 4 cookies as a snack.

bac egg, dried mango tea, water
almonds, applesauce
chicken ceasar salad, dried mango
diet pop, strawberries/grapes plain yogurt
chicken thigh, chicken open sandwich
chips, cheese,wine
water, iced tea all thoughout

1 egg salad sandwich
1 french fries, supersized from McDonalds
1 lasagna with meat sauce with baguette bread
1 ice cream sandwich
plenty of water
